ingredients
- 3 heads broccoli, cut lengthways into quarters or sixths
- 4 tablespoons olive oil
- Salt and pepper
- 1/3 cup tahini
- 2 tablespoons sriracha
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup or honey
- 1 tablespoon soy sauce
- Juice of 1 lemon
- 2 cloves garlic
- 1/3 cup toasted almond, roughly crushed
- 1/3 cup shallots or spring onions, thinly sliced
- 1 tablespoon toasted sesame seeds
Method
Step 1
Preheat an oven to 240C and line a tray with baking paper.
Step 2
Place the broccoli onto the baking tray, drizzle with the olive oil, season well with salt, pepper and gently toss.
Step 3
Roast for 15 minutes until lightly charred and the stalk softened.
Step 4
Meanwhile, combine the tahini sauce ingredients with ¼ cup or so of water to make it a thick pouring consistency.
Step 5
Transfer the cooked broccoli to a platter, squeeze over some lemon and spoon over the sauce, making sure it hits all the parts of the broccoli so the nuts and herbs all stick to it!
Step 6
Scatter over the almonds, shallots, sesame seeds and another squeeze of lemon if you please!
