These easy fudgy chocolate brownies are gluten free for a healthier take on the classic dessert.

  • 3 tablepoons coconut oil
  • 2 tabelspoons cashew butter
  • 4 tablepoons cacao powder
  • 1/3 cup gluten free oat flour
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/3 teaspoon baking powder
  • pinch of salt
  • large handful dark chocolate, chopped



  • 2 ounces dark chocolate, choppped
  • 1 teaspoon coconut oil


  • Step 1

    Preheat oven to 350ºF (180ºC) and line a 8x8 inch brownie tray with baking paper.

  • Step 2

    Gently melt the coconut oil and cashew butter together in a small saucepan or in a microwave. Add the coconut sugar and using a whisk or handheld electric beater, cream until well combined. Beat in the eggs one at a time.

  • Step 3

    In a separate bowl, combine the dry ingredients. Fold into the wet mixture to create a smooth batter.

  • Step 4

    Stir in the chocolate chunks and transfer to lined tin. Bake for approximately 13-15 minutes or until a toothpick inserted into the center comes out with a few crumbs (for a fudgy center).

  • Step 5

    Allow the brownies to cool on a wire wrack. Meanwhile, melt the chocolate and coconut oil together for the ganache topping. Spread the chocolate mixture over the brownies and slice into squares.
