Vegetable Fried Rice with Egg

ingredients
- 4 tablespoons olive oil, divided
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 bunch scallions, chopped, whites and greens separated
- 1/2 cup green beans, chopped
- 1/2 cup carrots, diced
- Kosher salt, as needed
- 4 1/2 cups rice, cooked
- 3 eggs, beaten
- Fried egg, for serving, optional
Method
Step 1
In a large wok or skillet, heat 2 tablespoons olive oil over medium high heat. Add garlic and ginger and sauté for 30 seconds. Add white parts of scallions and sauté for 30 seconds. Then add green beans, carrots, kosher salt and cook for 4 minutes. When vegetables have softened, add cooked rice and stir to mix well. Push rice to one side of the skillet.
Step 2
Add remaining 2 tablespoons of olive oil and heat for 30 seconds. Add beaten eggs and cook for 1 minute. Using a heat safe spatula, scrap of any bits of egg that are sticking to the pan, until scrambled eggs form.
Step 3
Mix rice and eggs together, garnish with remaining scallions. Serve immediately, top with fried egg (optional).
