ingredients

  • 2 pieces of cod fillet
  • handful of samphire, woody stems removed
  • spoonful of butter
  • 1 jar (450 grams) roasted red peppers, drained
  • 1 teaspoon lemon juice
  • pinch of salt
  • black pepper
  • drizzle of olive oil

Method

  • Step 1

    In a high speed blend blitz the peppers, lemon juice, salt and pepper to taste and a couple of tbsps olive oil until smooth.

  • Step 2

    Season the fish with salt, add a little olive oil to a non stick pan over a medium heat and add the fish. When golden on the underside, flip it, add butter to the pan and continue cooking, spooning the foaming butter over it until the fish is cooked. Thicker cuts of fish it might need a few minutes in the oven to finish cooking through.

  • Step 3

    Bring a small pan of water to the boil, drop the samphire in and let it cook for a couple of minutes then drain.

  • Step 4

    You can warm the pepper sauce in a pan or leave it cold, spoon over a plate then top with the cod and samphire.
