A Note From Lena Vergnes

This flaky white fish is prized in many countries. Centuries ago, (we're talking Viking period) it used to be salted, and eaten as fuel. Nowadays cod can be found in all sorts of preparations. It's a versatile fish partly because of its thickness in comparison to other white fishes so it can stand up to roasting, frying, stewing, and more.
