ingredients
For the Spicy Marinara
- 1 head of garlic
- 1/4 cup olive oil
- 1 large onion, chopped
- 1 teaspoon red pepper flakes
- 1 teaspoon tomato paste
- 1/2 cup medium-bodied red wine (such as Merlot, Cabernet Sauvignon, or Chianti)
- 1 (28 ounce) can Tuttorosso Whole Peeled Tomatoes
- 2 (15 ounce) cans Tuttorosso Crushed Tomatoes
- Flakey sea salt, to taste
- Freshly ground black pepper, to taste
- Torn basil leaves, to taste plus more for garnish

For the Burrata Toast
- 1 slice bread of choice (such as a country-style sourdough or a crusty Italian loaf)
- 1 (4 ounce) ball burrata cheese
- 1-2 tablespoons olive oil, for coating bread and cooking
- 1 egg, seperated
- 1/4 cup panko breadcrumbs
- Neutral oil (such as grapeseed), for frying
Method
To make the spicy marinara
Step 1
Slice off the top of the head of garlic, drizzle with olive oil, season with salt and pepper, and bake in a covered cocotte or tin foil for about 40-50 minutes or until tender.
Step 2
In a Dutch oven, heat the olive oil over medium heat. Add the onion and red pepper flakes, and cook for 5 minutes. Add the tomato paste and cook for an additional 3 minutes.
Step 3
Add the red wine and cook for 2 minutes.
Step 4
Add the Tuttorosso Whole Peeled Tomatoes and Crushed Tomatoes. Using kitchen scissors, cut tomatoes to break them down.
Step 5
Add the basil, salt, and pepper.
Step 6
Cover and cook over low to medium heat for 1 1/2 hours, stirring occasionally. Add roasted garlic and blend the sauce using an immersion blender or transfer to a food processor. Season to taste.
To make the fried yolk and assemble the toast
Step 1
Separate egg yolks from the whites and place them in a shallow bowl with breadcrumbs. Freeze for at least 2 hours.
Step 2
Fry egg yolks in fry oil for 1-2 minutes. Coat bread in olive oil and cook for 2-3 minutes per side.
Step 3
Top bread with tomato sauce, burrata, a drizzle of olive oil, basil, and fried egg yolk.
Step 4
Drizzle the toast with olive oil, a sprinkle of flakey sea salt, black pepper, and fresh basil before serving.
