"One for the weekend. Chunky cheese scones made with lots of mature cheddar as well as some olives and chopped green chillies as that’s what I had lying about. But again, feel free to freestyle it to suit what you’ve got to hand."

ingredients
- 13 1/2 ounces all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon paprika
- 1 1/2 tablespoons baking powder
- 3 ounces cold butter, cubed or grated
- 5 1/4 ounces (plus more to top) cheddar, grated
- 3/4 cup milk (plus more to glaze)
- 1 egg, beaten, for egg wash (optional)
- 1/4 cup Olives, chopped
- 2 tablespoons green chilis, chopped
Method
Step 1
Preheat oven to 400ºF. Line two baking sheets with parchment paper.
Step 2
In a large bowl, combine flour, baking powder, salt, paprika. Add the cold butter and use your hands to mix together until a coarse, sandy texture is achieved.
Step 3
Add the cheese, olives, and chilis. Mix to combine. Form a well in the center and pour in the milk. Using a fork or your hands, slowly mix until a shaggy dough forms.
Step 4
Transfer to a floured surface and gently knead the dough a few times (don't overwork it). Pat into a 1 1/2 inch thick disc and cut into 8 wedges.
Step 5
Brush with milk or beaten egg and top with additional grated cheddar. Bake for 15-20 minutes until golden.
