ingredients

  • 13 1/2 ounces all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 1/2 tablespoons baking powder
  • 3 ounces cold butter, cubed or grated
  • 5 1/4 ounces (plus more to top) cheddar, grated
  • 3/4 cup milk (plus more to glaze)
  • 1 egg, beaten, for egg wash (optional)
  • 1/4 cup Olives, chopped
  • 2 tablespoons green chilis, chopped

Method

  • Step 1

    Preheat oven to 400ºF. Line two baking sheets with parchment paper.

  • Step 2

    In a large bowl, combine flour, baking powder, salt, paprika. Add the cold butter and use your hands to mix together until a coarse, sandy texture is achieved.

  • Step 3

    Add the cheese, olives, and chilis. Mix to combine. Form a well in the center and pour in the milk. Using a fork or your hands, slowly mix until a shaggy dough forms.

  • Step 4

    Transfer to a floured surface and gently knead the dough a few times (don't overwork it). Pat into a 1 1/2 inch thick disc and cut into 8 wedges.

  • Step 5

    Brush with milk or beaten egg and top with additional grated cheddar. Bake for 15-20 minutes until golden.
