ingredients
- 4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 whole egg + 5 egg yolks (plus 1 extra yolk for egg wash)
- 1 cup plus 2 tablespoons softened salted butter
- 1/4 cup jam (optional)
Method
Step 1
In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, and softened butter. Mix on low speed until a crumbly mixture forms.
Step 2
Add the eggs and mix on low until a uniform dough forms.
Step 3
Preheat the oven to 400°F. Grease a 9 ½-inch round cake pan with butter.
Step 4
If not using jam: Press all the dough into the pan, spreading it into an even layer with a spatula.
Step 5
If using jam: Press half of the dough into the pan and spread it evenly. Spread the jam on top, leaving a ½-inch border around the edges. Roll out the remaining dough between two sheets of parchment paper, then place it over the jam layer. Use a spatula to gently press and seal the edges.
Step 6
In a small bowl, beat the extra egg yolk with a pinch of salt, then brush it over the top of the dough. Using the back of a fork, create a traditional crisscross pattern on the surface.
Step 7
Bake for 20 minutes, then reduce the temperature to 350°F and bake for another 20-22 minutes, until golden brown.
Step 8
