  • 1 pound (16 ounces) penne pasta
  • 2 pounds ground Italian sausage
  • 1 small yellow onion, diced
  • 2 14.5 ounce cans Red Gold Petite Diced Tomatoes with Green Chilies
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 orange bell pepper, julienned
  • 1 tablespoon Italian seasoning
  • 1 cup parmesan cheese, plus more for serving

Method

  • Step 1

    Bring a large pot of salted water to a boil. Add pasta and a large pinch of salt to the water. Cook to package instructions.

  • Step 2

    Heat a large skillet over medium-high heat and add the sausage. Cook until most of the pink is gone, about 8-9 minutes.

  • Step 3

    Add the onions to the skillet and cook for 4 minutes until slightly tender.

  • Step 4

    Add the Red Gold Petite Diced Tomatoes with Green Chilies, sliced peppers, and Italian seasoning. Cook for 10 minutes until the peppers soften. Stir in the pasta and parmesan cheese, then simmer for 5-7 minutes.

    Serve immediately with more parmesan cheese.
