Cake
ingredients
- 4 egg whites
- 80 grams caster sugar
- 4 egg yolks
- 30 grams vegetable oil
- 80 grams bread flour
Dipping Sauce
ingredients
- 100 grams chocolate
- 30 grams butter
- 120 ml milk
- 150 grams icing sugar
- 20 grams cocoa
- 50 ml boiling water
Coffee Cream
ingredients
- 250 ml cream
- 10 grams coffee powder
Method
Step 1
Mix egg yolks, oil, milk, and flour together. Beat egg whites while gradually adding sugar to medium peaks.
Step 2
Fold meringue into yolk mixture.
Step 3
Pour into lined baking tray and bake at 160C/325F for around 55 minutes.
Step 4
For the chocolate sauce, melt butter and chocolate. Add icing sugar and milk. Then add boiling water before finishing lamingtons.
Step 5
For the coffee cream, beat cream with coffee powder or espresso shot until stiff peaks. Add a teaspoon of icing sugar if you’re a sweet tooth.
