"Vegan Nanaimo bars
I hope your day is as lovely as these delicious chocolate treats! Three delicious layers of yumminess - chocolate-coconut crust, middle custard layer and top chocolate layer. My plant-based version can be whipped up quickly and tastes rich and decadent (but is actually loaded with protein and healthy fats). And itโs a no-bake dessert! Sounds like a win-win! ๐๐ฝ"

For the Crust
ingredients
- 1/4 cup raw pecans
- 1/4 cup raw almonds
- 2 tablespoons hemp seeds
- 1/2 cup unsweetened shredded coconut
- 3 tablespoons cocoa powder
- 4 Medjool dates
- a pinch of salt
For the Coconut Layer
ingredients
- 1 cup raw cashews, soaked in warm water for at least 1 hour
- 1 tablespoon maple syrup
- 1-2 tablespoons non-dairy milk, as needed
For the Chocolate Layer
ingredients
- 1 cup vegan chocolate chips
Method
Step 1
Make the crust: Process all ingredients in a blender or food processor until clumps together in one ball. Divide and fill a muffin tin or brownie tray, pressing the mixture down flat.
Step 2
Make the coconut layer: Process all ingredients together until smooth and creamy, adding milk as needed to help the blender. Layer on top of the crust mixture and freeze for at least 1 hour.
Step 3
Melt the chocolate chips in the microwave at 30-second intervals, stirring to melt evenly. Quickly spread on top of the coconut layer, using as much or as little as you want. Freeze for at least 15 minutes.
