Sesame Chicken Vegetable Lo Mein

For the Sauce

ingredients

  • 1 tablespoon toasted sesame oil
  • 1/4 cup coconut aminos
  • 2 tablespoon honey
  • 1 teaspoon ground ginger
  • 2 cloves garlic cloves, minced (or 2 tsp garlic powder)

For the Lo Mein

ingredients

  • 14 ounces package Lo Mein noodles or other pasta
  • 1 tablespoon plus 2 tsp sesame oil
  • 4 ounces raw chicken breast cutlets, sliced
  • 2 cups assorted chopped vegetables (bell pepper, broccoli, mushrooms, shredded carrots, red cabbage)
  • sesame seeds, as garnish
  • green onion, chopped

Method

  • Step 1

    In a small bowl, whisk together the sauce ingredients. Set aside.

  • Step 2

    Next, cook the lo mein noodles according to package directions. Drain and rinse in cold water. Toss cooked noodles in two teaspoons sesame oil and set aside.

  • Step 3

    Preheat 1 tbsp sesame oil in a large wok. To the wok add chicken and mixed veggies. Sauté until the chicken is cooked through.

  • Step 4

    Mix in the cooked noodles and sauce. Toss everything together.

  • Step 5

    Turn off the heat, and garnish the dish with sesame seeds and green onions.
