Salmon
- 1/4 cup teriyaki miso sauce
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 2 6 oz wild Alaskan sockeye salmon

Salad
- 8 ounces buckwheat soba noodles
- 1 teaspoon sesame oil
- 1 bunch spinach
- 2 baby bok choy
- pinch of salt
- 1 cup shiitake mushrooms
- 3 tablespoons Annie's Organic Shiitake Sesame Vinaigrette
- 2 eggs, soft boiled
- 1/2 small cucumber, sliced
- 1 bunch cilantro, chopped
- 1 bunch scallions, chopped
- 1 tablespoon sesame seeds
Method
Step 1
Make the miso marinade: Combine miso sauce, soy sauce, honey and vinegar in a bowl.
Step 2
Add salmon, cover and refrigerate for 2-3 hours.
Step 3
Bring a pot of water to boil and cook soba according to the manufacturer's instructions.Drain and lightly rinse with cool water. Toss with sesame oil to prevent sticking.
Step 4
In a skillet over medium-high heat, cook spinach, bok choy and shiitake mushrooms with a pinch of salt until slightly wilted.
Step 5
Preheat broiler. Alternatively, set an air fryer to broil. Broil or air fry salmon for 6-8 minutes until cooked to desired degree of doneness.
Step 6
In a large bowl, toss soba noodles with Annie’s Organic Shiitake Sesame Dressing. Top with salmon, spinach, bok choy, mushrooms, eggs, cucumber, cilantro, scallions and sesame seeds.
