🍕🥑 VEGAN VEGGIE PIZZA TOASTS:
- spread sauces of choice on slices of sourdough — I used marinara + vegan pesto
- lay cheese slices on top of sauce (so convenient; you don’t even have to shred the cheese yourself!)
- pile on the toppings!! I used spinach, onions, sundried tomatoes, jalapeños, avocado, & corn

For the Base:
ingredients
- 6 small slices of sourdough bread, or other crusty bread
- 6 tablespoons marinara sauce, or pizza sauce
- 6 tablespoons vegan pesto
- 6 slices of Vevan Ched-Melts or P'Jack-Melts
For the Toppings:
ingredients
- 6 sun-dried tomatoes, chopped
- 1/4 cup fresh spinach
- 1/4 avocado, sliced `
- 2 tablespoons corn kernels, fresh or frozen, defrosted
- 2 tablespoons red onion, chopped
- 1 small jalapeno, sliced `
- 1 teaspoon dried oregano
Method
Step 1
Heat oven to 400° F.
Step 2
Arrange bread on a large baking sheet. Spread each piece of bread with 1 tablespoon each marinara and pesto. Lay a cheese slice on top of each slice.
Step 3
Divide sun-dried tomatoes, spinach, avocado, corn, red onion and jalapeño on top of cheese. Sprinkle with oregano and bake until cheese is all melted and bread is golden brown.
