  • 4 croissants, halved lengthwise
  • 1 cup crème fraîche
  • 1/4 mayonnaise
  • 1 teaspoon lemon juice
  • 2 sprigs fresh dill
  • 1/2 cup capers, roughly chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 red onion, very thinly sliced
  • 1 1/2 pounds thinly sliced smoked salmon
  • 2 medium heirloom tomatoes, thinly sliced
  • 4 cups arugula

Method

  • Step 1

    Add creme fraiche, mayonnaise, lemon juice, dill, capers to a medium bowl. Season with salt and pepper to taste. Mix to combine. Fit a piping bag with a size 12 tip, then fill halfway with mixture. Pipe filling in a swirl pattern to generously coat croissants. Alternatively, use a spatula to gently spread mixture and evenly coat each croissant half.

  • Step 2

    Place sliced red onion on bottom half of each croissant. Top with layers of smoked salmon, tomato slices, and arugula. Place top half of croissant on each. Serve at room temperature.
