We're back to school which means it is time for students to fuel up! Insert these Dining Hall Nachos - packed with flavor & nutrition but easy enough to make out of a dorm room microwave. We relied on Real California Milk to build these epic nachos & to take us back to the glory days. - 1 cup Real California Shredded Cheddar Cheese, divided
- 1 cup Real California Monterey Jack Cheese, divided
- 1/4 cup Real California Whole Milk
- 1/4 cup Real California Light Sour Cream
- 2 limes, juiced
- 1/2 cup halved grape tomatoes
- 1/4 cup sliced red onion
- 2 tablespoons fresh cilantro, chopped, plus more for garnish
- Kosher salt, , to taste
- Black peppercorns, freshly ground
- 3 cups multigrain tortilla chips
- 1/2 avocado, cubed
- Pickled jalapeños, for topping
Method
Step 1
Make the queso. Combine ½ cup cheddar cheese, ½ cup Monterey Jack cheese, and milk in a microwave safe bowl. Microwave on high until cheese is fully melted, about 1 minute. Stir to combine. Set aside.
Step 2
Make the sour crema. In a small bowl, mix sour cream with juice of 1 lime until emulsified and creamy. Set aside.
Step 3
Make the pico de gallo. In a small bowl, mix tomatoes, red onions, cilantro, remaining juice of 1 lime, salt and pepper. Set aside.
Step 4
Assemble the nachos. On a microwave safe plate, arrange chips and top with remaining ½ cup cheddar cheese and remaining ½ cup Monterey Jack cheese. Microwave until cheese is melted, about 1 minute. Top with sour cream, pico de gallo, queso, jalapeños, and fresh cilantro (for garnish). Serve immediately.
