Serves 4

Ingredients:

1 head red leaf lettuce

1 cup roasted potatoes (try these Vegan Sweet & Spicy Mustard Potatoes by @veganwhat)

1 cup tomatoes

1 cup shredded Brussels sprouts

1/2 cup hemp seeds

Kosher salt & freshly ground black pepper, to taste

Vegan ranch dressing (I use @followyourheart)

Directions:

In a large bowl, combine all ingredients and toss. Divide between 4 bowls and serve immediately.
