- 1 cup raw cashews
- 4 cloves garlic
- 1/ 4 cup nutritional yeast
- 1 lemon, juiced
- 1/ 2 cup water, plus more as needed
- 2 cups sun dried tomatoes, soaked for 15 minutes
- 1/ 2 cup olive oil
- Salt and black pepper
- 2 cups tomato puree
- 1 pound pasta, cooked according to package directions
- Fresh salad, for serving
Add cashews, garlic, nutritional yeast, lemon juice and water to high-speed blender and blend for 30 seconds or until smooth and creamy. Add extra water if you’d prefer a thinner texture. Transfer to a bowl.
Add sun-dried tomatoes, olive oil and salt & pepper to Vitamix. Blend until you have a paste-like consistency.
In a large pan, heat the sun-dried tomato paste and add the tomato puree. Add the cashew cream and stir through until heated. Add the cooked and drained pasta and stir through to coat.
Serve with a side of fresh salad and enjoy!
