Recipe Card

ingredients

  • 1 cup raw cashews
  • 4 cloves garlic
  • 1/4 cup nutritional yeast
  • 1 lemon, juiced
  • 1/2 cup water, plus more as needed
  • 2 cups sun dried tomatoes, soaked for 15 minutes
  • 1/2 cup olive oil
  • Salt and black pepper
  • 2 cups tomato puree
  • 1 pound pasta, cooked according to package directions
  • Fresh salad, for serving

Method

  • Step 1

    Add cashews, garlic, nutritional yeast, lemon juice and water to high-speed blender and blend for 30 seconds or until smooth and creamy. Add extra water if youโ€™d prefer a thinner texture. Transfer to a bowl.

  • Step 2

    Add sun-dried tomatoes, olive oil and salt & pepper to Vitamix. Blend until you have a paste-like consistency.

  • Step 3

    In a large pan, heat the sun-dried tomato paste and add the tomato puree. Add the cashew cream and stir through until heated. Add the cooked and drained pasta and stir through to coat.

  • Step 4

    Serve with a side of fresh salad and enjoy!
