Fluffy scrambled eggs with a twist! Using mirin adds a delicious umami flavor and less salt is required. Add to rice or serve with bacon and toast.

ingredients
- 5 large eggs
- 1/4 teaspoon sea salt
- 1 tablespoon mirin
- 1 tablespoon heavy cream
- 1 tablespoon unsalted butter, divided
Method
Step 1
Break eggs into a bowl and beat well. Add in salt, mirin, and cream. Beat until combined.
Step 2
Melt half of the butter in a non-stick saucepan over low heat and swirl the pan around. Pour in the beaten eggs and stir constantly until creamy.
Step 3
Now add in the remaining butter and remove from heat. Keep stirring as the eggs will continue to cook with the heat from the pan. It should fluff up a bit but still creamy.
Step 4
Grind black pepper on top and serve immediately.
