For the Spinach Sauce

  • 1 avocado
  • 1 cup steamed spinach
  • 2 small cloves garlic
  • 1/ 4 cup plus 2 tablespoons olive oil
  • 1/ 4 cup hummus
  • Sea salt
  • Handful basil

For the Pasta

  • 2 tablespoons olive oil
  • 1 cup sliced ` mushrooms
  • 1 cup almond milk ricotta
  • 1 pound chickpea pasta, cooked according to package directions


  • Step 1

    To make the spinach sauce: Combine all ingredients in a food processor or blender. Puree until smooth. Add 2-3 tablespoons water to thin the sauce if needed.

  • Step 2

    To assemble the pasta: Heat olive oil in a skillet. Sauté mushrooms for a few minutes until soft. Toss with almond milk ricotta and pasta, then pour spinach sauce over it to serve.
