ingredients
- 2 Russet potatoes, peeled and thinly sliced
- 3/4 cup whole milk
- 3/4 cup heavy cream
- 4 cloves garlic, minced
- 3 tablespoons butter cut in cubes
- 1 cup grated Gruyere cheese
- dash nutmeg
- dash cayenne pepper
- 1/2 each, salt and black pepper
Method
Step 1
Heat the oven to 350. In a mixing bowl combine the milk, cream, garlic, nutmeg, cayenne and salt and pepper and stir to combine.
Step 2
Dot the bottom of the cast-iron skillet with some of the butter. Add a layer of sliced potatoes in a concentric circle to the skillet. Add a layer of the cheese, then pour in ⅓ of the milk mixture. Make two more layers for a total of three. Sliced potatoes, butter cubes, cheese, then the milk mixture.
Step 3
Place the cast-iron skillet in the oven and bake for about 1 hour and 15 minutes. When the gratin is golden-brown, hot and bubbling it's ready to come out of the oven. Let it sit 5 minutes, then slice into wedges and serve. Garnish with fresh rosemary
