If you're going to go to the trouble of making any kind of laminated dough, you should know it's well worth the efforts to make a double batch, so you can transform the leftovers into bread pudding, as @Thirdculturechef did here!

Ingredients:

3 day old croissants


1 cup milk

½ cup coconut sugar

1 vanilla bean or 1 tsp vanilla extract

2 eggs

1 cup blueberries

½ cup slivered almond


Preheat oven 400˚F. Butter a 20" spring form tin, mix sugar, milk, vanilla and eggs. Cut the croissants in large pieces and dip them for 30 seconds in the milk mixture. Place them in the spring form nice and close to each other, pour remaining wet mixture on top. Place blueberries in the middle and on top (I used almonds as well) and finally sprinkle raw brown sugar on top. 20-25 minutes later dig in!
