These Adobo Marinated Eggs were inspired by the popular Korean Mayak Eggs.

The recipe is simple, after soft-boiling your eggs and plunging them in an ice bath, let them sit in the spicy marinade for at least one hour. The longer they marinate, the more flavor they will have!

ingredients

  • 1/2 dozen eggs
  • 4 cloves finely minced garlic
  • 1 serrano pepper
  • 2 Thai chilis
  • 2 stalks green onion, finely diced
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1/4 cup cane vinegar
  • 1/4 cup agave syrup
  • Ice

Method

  • Step 1

    Bring a pot of boiling water to a boil. Once water starts boiling gently place eggs in water using a slotted spoon (or tongs like I did) and time for exactly six minutes. Variations in temperature like taking the eggs out and letting them sit on the counter all effect the consistency of the yolks but this is my usual sweet spot.

  • Step 2

    After 6 minutes, use slotted spoon to immediately plunge eggs in ice bath. Let cool at least 10 minutes before peeling.

  • Step 3

    Combine ingredients for adobo marinade in a bowl and mix throrougly. If you want your sauce less spicy you can either omit the chilis completely or remove the seeds. The peppers add a nice crunch and the spice mellows a tad in the sweet/tangy/salty marinade. Garlic should be very small as these pieces will be eaten.

  • Step 4

    Once eggs have cooled gently peel shells using bowl of water to help separate shell from eggs. Place peeled eggs in container to be combined with marinade.

  • Step 5

    Cover the eggs with marinade and marinate for at least an hour. Honestly, I could wait so I ate it right away and they were good but they tasted better the next day. And if you want you can quickly warm up the eggs in the microwave for a few seconds to get them warm but be mindful if you leave them in the microwave too long you’ll make the yolks get hard.
