Bean and Beet Root Superfood Burger
Recipe - Makes 3-4 patties:
1. A can of kidney beans (400g), washed and drained.
2. A tbsp pumpkin seeds - processed.
3. A tbsp of flaxseed.
4. 2 tsp of poppy seeds.
5. 2 tsp garlic, minced.
6. 1 tsp cumin.
7. 1 tsp curry powder.
8. 1 tsp coriander powder.
9. 1/2 tsp chilli powder.
10. Approximately 1/4 cup of Beetroot sliced. You may want to add a bit more than this.
11. 1/4 tsp Himalayan salt and pepper.
12. 1 tbsp wholemeal flour.
Directions:
1. Place chopped beetroot in oven for 20 minutes, flipping. Once cooked leave to cool for 10 minutes. Then place in food processor. Pulse once. You still want some texture!
2. Place can of kidney beans in bowl. Mash with fork. Again, make sure there's some texture! So don't completely mash.
3. Add Beetroot and kidney beans together and mix.
4. Add everything else, adding the flour last. If mixture is too wet add a bit more flour, but make sure it's mixed well.
5. Form into patties. Place on non stick tray and place in oven for 20 minutes. Flip them at about 10 minutes.
6. Leave to cool and add extra sauce etc! I added some spicy hot sauce.
