- 1/4 cup Greek yogurt

ingredients
Brown Butter Streusel
- 1/4 cup unsalted butter
- 1/2 cup all purpose flour
- 1/4 cup light brown sugar
- 1 teaspoon pumpkin pie spice
ingredients
Maple Glaze
- 1 cup powdered sugar
- 2-3 tablespoons maple syrup
Method
For Pumpkin Bread:
Step 1
Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan.
Step 2
In a large mixing bowl, whisk together olive oil and brown sugar until well combined.
Step 3
Add eggs one at a time, mixing well after each addition. Stir in the pumpkin puree, Greek yogurt, and vanilla extract until smooth.
Step 4
In a separate bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
Step 5
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to over mix.
Step 6
Pour the batter into the prepared loaf pan, spreading it evenly.
For Brown Butter Streusel:
Step 1
In a small saucepan, melt the butter over medium heat. Allow it to cook until it turns a golden brown color and gives off a nutty aroma. Be careful not to burn the butter. Remove from heat and let it cool slightly.
Step 2
In a bowl, combine the flour, brown sugar, and pumpkin pie spice. Add the cooled brown butter and mix until crumbly.
Step 3
Sprinkle the brown butter streusel evenly over the pumpkin bread batter.
Step 4
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Step 5
Allow the pumpkin bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Step 6
While the loaf is cooling, make the glaze. Combine the powdered sugar and maple syrup in a bowl and whisk until smooth. Drizzle on the entire loaf or just on a slice at a time.
