Japanese Sandwiches Onigirazu
(Serves 2)
Sandwich Ingredients
Cooked Rice (preferably warm)
2 nori seaweed sheets
Purple Cabbage
Spinach (or greens of your choice)
Green Onion
Okonomiaki sauce (optional)
Sesame seeds (optional)
saran wrap
Katsu Ingredients
Tofu
3 tbsp aquafaba (replaces 1 egg)
4 tbsp flour of choice
10 tsp water
1 tbsp vegan mayo
2 cups panko bread crumbs (or any breadcrumbs)
1 tsp salt
some oil (omit if you want to bake, air fry, or any other method )
Directions for Katsu
Mix all katsu ingredients except for tofu, panko crumbs, and oil into a small bowl. Mix those ingredients until a well combined batter forms. Prepare the way you will cook your katsu(fry, air bake, bake). Dip tofu or desired protein into batter, shake off excess, and cover with panko crumbs in a separate bowl. Cook until all sides are brown and crispy. I fried mine for a few minutes each sides. It doesn't take very long so watch your heat.
Directions for Sandwich
Place a piece of saran wrap on a flat surface. Make sure it's bigger than your seaweed. Place seaweed on top with the corners pointing towards you like a diamond. Apply some rice in the middle and form a circle. Stack the rest of your ingredients, including your katsu. Finish off by adding one rice (think of it like your bread slice). Take each corner of the seaweed sheet and cover your stack. If it doesn't stick, add some water to the seaweed. Lastly, form with saran wrap and cut in half. Drizzle some Okonomiaki sauce and top with sesame seeds. Enjoy
