ingredients
- 4 chicken thighs
- 2 teaspoons turmeric
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 2 tablespoons ginger-garlic paste
- lemon juice from 1/2 lemon
- Black pepper
- Salt
Method
Step 1
preheat oven to 375F. in a large cast iron skillet, heat 2 tbs olive oil over medium-high heat and place chicken, skin side down, onto skillet. cook for 5 min or until golden-brown & flip; repeat on the other side.
Step 2
line a baking sheet with foil and place chicken over it. add a sliced lemon & cover loosely with another sheet of foil. bake for 30 min, flipping over halfway.
Step 3
meanwhile, in the same skillet, add 1/2 white onion (finely chopped) - mix with the spices & charred bits from the chicken & cook till soft & translucent.
Step 4
add 1 tbs garlic paste or minced garlic & saute for 1 min. add 2 tsp mediterranean oregano, 1 tsp turmeric, 1 tsp ground cumin
Step 5
Rinse 1 cup basmati rice. allow to soak for 20 min. drain & add to onion mixture. saute until golden brown. add 2 cups chicken broth and 1 tsp salt. allow to boil. Cover & cook for 7-10 min minutes. fluff with a fork. Carefully remove chicken from oven. place directly over rice. garnish with lemon & chopped parsley. enjoy!
