For the Meatballs
ingredients
- 1 pound ground beef
- 1/4 cup almond flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 cup grated parmesan cheese
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Cooking oil spray
- 1 head garlic
- 12 sweet dinner rolls
- Provolone cheese slices
- 1 cup shredded Mozzarella cheese
- 1/4 cup grated parmesan cheese
- Fresh basil
For the Marinara
ingredients
- 1 tablespoon extra virgin olive oil
- 1/4 white onion, diced
- 1 (10 ounce) can Red Gold Mild Diced Tomatoes with Green Chilies
- 1 (6 ounce) can Red Gold Roasted Garlic Tomato Paste
- 1 teaspoon dried oregano
- 1 teaspoon crushed red pepper (optional)
- 1 teaspoon freshly ground black pepper
- 1 cup water
For the Garlic Butter

- 1/4 cup unsalted butter
- 1 tablespoon dried oregano
- 1 tablespoon parmesan cheese
- 1 teaspoon crushed red pepper
Method
Step 1
Preheat oven to 400°F and prepare a mini muffin tray by spraying with cooking oil. Set aside.
Step 2
In a large bowl, combine all ingredients for meatballs. Roll the mixture into 12 balls. Transfer each meatball to a compartment of the muffin tray.
Step 3
Take the head of garlic, cut off the root to expose each clove, wrap it in foil, and place it onto the muffin tray.
Step 4
Bake for 15-17 minutes until meatballs are cooked through and browned on the outside, ensuring they remain moist. Remove the meatballs and allow the garlic to cook for another 10-15 minutes until the cloves are soft. Remove from the oven and set aside to cool. (Keep the oven on).
Step 5
Heat oil in a large pot over low-medium heat. Add diced onion and sauté until soft and translucent. Then, add Red Gold Mild Diced Tomatoes with Green Chilies and Red Gold Roasted Garlic Tomato Paste. Incorporate spices and mix until well combined. Gradually add water until the sauce reaches the desired consistency.
Step 6
In a small microwave-safe bowl, melt butter in 20-second increments. Add the previously set aside garlic cloves by squeezing them out. Mix in oregano, parmesan, and crushed red pepper.
Step 7
Place the bottom half of the dinner rolls onto a parchment-lined baking sheet. Top with marinara sauce, mozzarella, provolone, another layer of marinara sauce, meatballs, and parmesan cheese. Cover with the top half of the rolls and brush with garlic butter.
Step 8
Loosely cover the sliders with a sheet of foil and return to the oven. Bake for 10 minutes, then remove the foil and bake for another 10 minutes until the cheese has melted and the tops of each slider are slightly browned. Brush the tops with the remaining garlic butter, garnish with fresh basil, and serve warm.
