- 1 head cauliflower, chopped into florets
- 1/ 4 cup olive oil
- 2 tablespoons curry powder
- 4 tortillas, of choice
- 1/ 2 cup chopped cilantro
- 1/ 4 cup chopped pistachios
- Tahini, for drizzling
Preheat oven to 400ºF. Toss cauliflower in curry powder, olive oil and salt. Spread in a single layer on a baking sheet. Cook for 30-45 minutes.
Heat up tortillas in a skillet. Place roasted cauliflower on each tortilla, then top with cilantro, pistachios and a drizzle of tahini.
