Watermelon Salad with Mustard Vinaigrette

Recipe Intro From thefeedfeed

"Don't yuck my yum!" is a phrase I used as a kid's cooking class instructor. This open-minded approach to unusual food combinations is why I have a soft spot for TikTok food trends. Bacon made out of carrots? Intrigued. Coconut water and frozen fruit aka "Nature's Cereal"? Sure, sounds refreshing. In May, I started seeing folks on TikTok squeeze yellow mustard on slices of watermelon, inspired by the creator @yayayayummy who shares unexpected pairings like vanilla ice cream and chili oil. Their bio reads "let me earn your trust!"

While I haven't actually tried yellow mustard on a slice of watermelon (I know, I know!) it reminded me of a simple, zippy mustard vinaigrette I once had on a fruit-laden summer salad. My version of this trend is loose. Here, juicy pieces of watermelon are tossed with peppery arugula, fresh herbs and creamy goat cheese and drizzled with a simple Dijon mustard vinaigrette. The gentle heat of the mustard is the perfect complement to sweet summer watermelon. It makes me feel like I'm dining in the south of France, which is never a bad feeling to have. Just don't yuck my yum!
