If vodka isn't your thing, you can still use the pineapple skin to infuse your favorite spirit, or just skip the booze altogether.

ingredients
- 1 medium pineapple, peeled, cored, and diced (saving some of the skin)
- 8 ounces vodka (optional)
- 2 tablespoons sugar
- 1/4 jalapeno (optional)
- 1 tablespoon fresh mint leaves, packed
- Juice of one lime
- 2 cups water
Method
Step 1
Cut pineapple. Add skins to a mason jar and top with vodka. Let infuse for at least 24 hours (optional).
Step 2
In a high speed blender, combine pineapple, sugar, jalapeno, mint, lime juice, and water. Run mixture through a fine mesh strainer.
Step 3
Fill four glasses with ice. Top with pineapple mixture and 2 oz of vodka for each. Serve immediately
