We're back to school which means it is time for students to fuel up! Insert these Dining Hall Nachos - packed with flavor & nutrition but easy enough to make out of a dorm room microwave. We relied on Real California Milk to build these epic nachos & to take us back to the glory days. These nachos are filled with ingredients you can easily find in your dining hall along with Real California Milk dairy products They're the perfect way to get essential nutrients like protein, calcium and vitamin D!

- 1 cup Real California Shredded Cheddar Cheese, divided
- 1 cup Real California Monterey Jack Cheese, divided
- 1/ 4 cup Real California Whole Milk
- 1/ 4 cup Real California Light Sour Cream
- 2 limes, juiced
- 1/ 2 cup halved grape tomatoes
- 1/ 4 cup sliced red onion
- 2 tablespoons fresh cilantro, chopped, plus more for garnish
- Kosher salt, , to taste
- Black peppercorns, freshly ground
- 3 cups multigrain tortilla chips
- 1/ 2 avocado, cubed
- Pickled jalapeños, for topping
Make the queso. Combine ½ cup cheddar cheese, ½ cup Monterey Jack cheese, and milk in a microwave safe bowl. Microwave on high until cheese is fully melted, about 1 minute. Stir to combine. Set aside.
Make the sour crema. In a small bowl, mix sour cream with juice of 1 lime until emulsified and creamy. Set aside.
Make the pico de gallo. In a small bowl, mix tomatoes, red onions, cilantro, remaining juice of 1 lime, salt and pepper. Set aside.
Assemble the nachos. On a microwave safe plate, arrange chips and top with remaining ½ cup cheddar cheese and remaining ½ cup Monterey Jack cheese. Microwave until cheese is melted, about 1 minute. Top with sour cream, pico de gallo, queso, jalapeños, and fresh cilantro (for garnish). Serve immediately.
