Cranberry Pistachio Cheese Ball

We teamed up with Simple Mills to bring you this festive recipe for any holiday entertaining you may be doing. Serve this cheese ball with their gluten free crackers for a delicious party snack or appetizer!

Cranberry Pistachio Cheese Ball

1 1/4 cups shelled pistachios


1 1/2 cups cranberries


8 oz goat cheese


8 oz cream cheese, softened


1 tbl sugar


1 tbl honey


1/4 tsp ground ginger


1/4 tsp ground cinnamon


1/4 tsp dried thyme


1/4 tsp dried rosemary


salt and pepper to taste




In a food processor, add the pistachios and cranberries and chop into small pieces. Scoop out 1/2 cup and transfer to a large bowl.


To the bowl, add the rest of the ingredients, and mix until thoroughly combined.


Scoop the cheese mixture out of the bowl and onto a large sheet of plastic wrap. Using your hands around the plastic wrap, shape mixture into a ball. Transfer to the freezer for 30 minutes.


On a clean surface, dump out the rest of the pistachio cranberry mixture. Spread into an even layer.


Unwrap the plastic wrap from the cheeseball and set atop the pistachio cranberry mixture. Using your hands, coat the entire cheeseball with the mixture until evenly covered. Press gently with fingers so the coating will stick to the surface. Serve immediately or keep in the refrigerator until ready to serve.
