Muffin Pan Stilton and Chive Popovers

If you’ve never made popovers before, this is the perfect introductory recipe. There is no special equipment required; these puff up perfectly in a standard muffin tin. One key step is to ensure that your oven is properly preheated before you heat up the muffin tin.  Also, make sure all of your ingredients are at room temperature to ensure an optimal rise. 

These super savory popovers rely on Stilton cheese for their delicious flavor.  There are over 700 distinct kinds of cheese produced in the UK, and Stilton has been expertly made using the same recipe and high-quality ingredients for generations. Only made in Leicestershire, Derbyshire and Nottinghamshire, Stilton has a clean, subtle flavor and adds a touch of unique umami to everything it’s added to.   • 3 tablespoons butter, melted and divided
  • 2 large eggs, room temperature
  • 1 cup milk, warmed slightly
  • 1 teaspoon Kosher salt
  • 1 cup all purpose flour
  • 1/3 cup British Stilton Blue Cheese, crumbled
  • 2 tablespoons chives, minced


  • Step 1

    Preheat oven to 400˚ F and brush just the outer 8 cups of a 12 cup muffin tin with 1 tablespoon melted butter.

  • Step 2

    While the oven preheats, in a large bowl, whisk the eggs, salt and milk together for 30 seconds. Add the sifted flour and whisk to combine, then whisk in the remaining melted butter. Fold in the blue cheese and chives. Transfer batter to a liquid measuring cup with a handle so you can easily pour the batter into the muffin tin. Let batter sit while the oven fully preheats.

  • Step 3

    Once the oven reaches 400˚F, place the prepared muffin tin in the oven for 5 minutes.

  • Step 4

    Working quickly, carefully remove the hot muffin tin from the oven and fill each muffin cup 1/2 full with popover batter. Place in the oven and bake for about 35 minutes, or until puffed and golden brown, do not open the oven during baking time.

  • Step 5

    Serve popovers warm.
