Bravo Top Chef's Chef Brother Luck won his way back into Season 16 with perfectly cooked scallops. The perfect scallop is just a few tablespoons of butter away! Make sure you dry them thoroughly with paper towels and season only before cooking. When your pan is hot, be sure to space them out well, since if they’re too close to each other they will steam instead of getting that perfect sear. Then, just remember that they don’t take long to cook, so don’t step away from the pan, even for a minute! That way you’ll end up with sweet, tender scallops coated in lemony brown butter!

ingredients
- 1 pound sea scallops
- Kosher salt and freshly ground black pepper, To Taste
- 4 tablespoons unsalted butter
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1 pinch crushed red pepper
Method
Step 1
Pat the scallops dry with paper towels and season with salt.
Step 2
In a skillet, melt 1 tablespoon butter over medium heat. Add scallops with enough room so they don't touch each other. Sear them until a nice crust forms, about 2 minutes, then carefully flip them over.
Step 3
Add the rest of the butter to the pan and when it begins to brown, add the zest, lemon juice and pepper, swirling the pan lightly to combine.
Step 4
Tilt the pan and baste scallops with a spoon for 1 minute, then transfer to a plate and drizzle with the brown butter. Serve immediately.
