A Note from Feedfeed

Literally, nothing makes me happier than a recipe that only has five ingredients and takes 15 minutes to make. Add on the fact that the recipe is for caramelized cinnamon toast in coconut oil, and all my troubles seem to melt away. This classic breakfast treat gets a little upgrade from a compound coconut oil with sugar and cinnamon to be spread on thick-sliced brioche before getting toasted in a nonstick skillet. The outside caramelizes to a perfect crisp, while the inside stays warm and soft for a new reason to skip the toaster.

ingredients

  • 1/4 cup coconut oil, room temperature
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon kosher salt
  • 4 (1-inch) slices vegan brioche bread, or any soft bread

Method

  • Step 1

    In a small bowl, mix the coconut oil, sugar, cinnamon, and salt until smooth.

  • Step 2

    Spread a thin layer of the mixture on both sides of the brioche slices

  • Step 3

    Heat a nonstick skillet over medium-high heat. Cook the brioche in 2 batches, flipping once, until golden brown, about 2 minutes per side. Transfer to a platter and serve warm.
