ingredients

  • 1 slice toasted sourdough bread
  • 1/2 tablespoon olive oil or butter for bread
  • 1 tablespoon apricot or orange jam
  • 4 pieces of sliced halloumi cheese drizzle of olive oil
  • 1/2 tablespoon hot honey or regular honey
  • Handful of fresh basil
  • Black pepper

Method

  • Step 1

    Bring a pan to medium/high heat and warm up sourdough bread in a dab of olive oil, garlic ghee or butter: ~2 mins per side. Set aside.

  • Step 2

    Use the same pan to pan-fry the halloumi slices in olive or high heat avocado oil ~2 mins per side. This cheese won’t melt and it’s perfect for frying or grilling!

  • Step 3

    To your toast, layer: jam, halloumi, basil, honey & pepper.
