Roasted Thyme Potatoes

"Friday feels with delicious thyme roasted crispy potatoes cooking in the over for a toasty night in. I’ve been seeing a lot of these coming up on my feed so I thought I would make my own. Happy Friday indeed"

  • 2 pounds baby potatoes
  • 5 tablespoons melted unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 Handful fresh thyme
  • 1 tablespoon sea salt


  • Step 1

    Preheat oven to 350ºF. Bring a pot of water to the boil and cook the potatoes until soft. Drain and place them on a baking tray lined with baking paper, making sure there is space between each of them (2 baking trays maybe required). With the back of a fork or small glass, gently press down on each of the potatoes to squish them. Make sure not to press too hard as you want them to still be in one piece.

  • Step 2

    In a small bowl add the melted butter, minced garlic & thyme and mix to combine. Drizzle over the potatoes making sure all of them are covered and season with sea salt. Bake in the over for 50 mins or until crispy golden brown. Serve hot.
