ingredients

  • 1/3 cup fresh or frozen raspberries
  • 2/3 cup fresh vanilla skyr yogurt (I use Icelandic Provisions vanilla skyr but feel free to sub with greek yogurt)
  • 1 pulp of one fresh passionfruit
  • 1/4 cup fresh blackberries
  • 1/4 cup fresh raspberries
  • 3 tablepoons granola of your choice (I used bumble and butters vanilla bean granola)
  • 1 tablepoons chia seeds
  • 2 tablepoons bourbon maple syrup (I use Runamok's bourbon maple syrup)

Method

  • Step 1

    If you are using frozen raspberries for your puree, simply defrost them in your microwave until soft and liquidy. Alternatively, you can soften the frozen raspberries on the stovetop. If using fresh raspberries for the puree, simply mash them with your fork and set aside.

  • Step 2

    Spread your yogurt in a swooping motion with a spoon on your desired plate. This will act as the base for all your toppings.

  • Step 3

    Spoon passionfruit pulp and raspberry puree over the yogurt and layer granola of your choice, raspberries and blackberries on top.

  • Step 4

    Sprinkle chia seeds all over your yogurt and drizzle your maple syrup all over. Grab your spoon and enjoy!
