  • 2 avocados, halved
  • 4 large eggs
  • Pinch of salt
  • 4 slices smoked salmon
  • 1 tablespoon chopped chives
  • 1 tablespoon chopped dill
  • Ground black pepper, to taste


  • Step 1

    To make scrambled eggs, crack the eggs into a medium bowl and whisk together with a pinch of salt. Pour the eggs on to a greased pan over medium heat (on the stove) and cook until scrambled.

  • Step 2

    Slice avocados in half and remove the pit. Scoop the scrambled eggs into the halved avocados. Top each avocado half with smoked salmon, chives and dill.

  • Step 3

    Sprinkle with salt and pepper.
