- 2 avocados
- 4 eggs
- 4 slices smoked salmon
- 1 tablespoon chives, chopped
- Salt and pepper, to taste
Begin with making the scrambled eggs by whisking the eggs with a pinch of salt and pepper.
Heat a pan on the stove, over medium-low heat. Pour the eggs over the pan and cook until light and fluffy.
Slice two avocados in half and remove the pits.
Fill each avocado with scrambled eggs, a slice of smoked salmon, and a sprinkle of chives.
