ingredients

Marinade:

  • 1/4 cups soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves of garlic
  • 1 inch knob fresh ginger
  • 1/2 apple, peeled

ingredients

Bolognese:

  • 16 oz Fettuccine pasta
  • 1 lb ground beef
  • 1 cup onion, diced
  • 1/2 cup carrot, diced
  • 1/2 cup celery, diced
  • 2 tablespoon tomato paste
  • 1 tablespoon Gochujang
  • 1/2 cup water
  • Salt, to taste.
  • Pepper, to taste.
  • Toasted sesame seeds, for garnish⠀
  • Perilla leaves, for garnish⠀

Method

  • Step 1

    To a blender, combine all marinade ingredients and blend until smooth. Pour half the marinade over ground beef, mix well, and marinate for at least 15 minutes.

  • Step 2

    In a large pot or dutch oven, sweat onions, carrots, and celery on medium heat until fragrant (around 5 minutes).

  • Step 3

    Raise heat to high, add in ground beef and season with salt and pepper. Stir frequently and break apart to avoid a lumpy sauce and cook until lightly brown.

  • Step 4

    Add in tomato paste and gochujang and caramelize for another 4-5 minutes.

  • Step 5

    Add the rest of the marinade and water, cover and simmer on low heat for at least 30 minutes.
