ingredients

  • 2 cups all purpose flour
  • 3/4 cups sifted cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoons corn starch
  • 1 cup softened butter or margarine
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 2 room temperature large eggs
  • 2 teaspoons vanilla extract
  • 48 rolo candies

Method

  • Step 1

    Whisk together in medium bowl dry ingredients.

  • Step 2

    Cream together butter and sugars. Add eggs and vanilla and mix well. Slowly add in the dry ingredients mixing at low speed until fully incorporated and a sticky dough forms. Chill in the refrigerator for at least an hour.

  • Step 3

    Roll chilled dough into balls, form each ball around a rolo candy. Place onto parchment-lined baking sheets and bake for 7 minutes or 5 minutes if convection oven at 350 F. Allow to cool on for at least 5 minutes before removing onto wire racks.
