  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 1/4 cup all purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup sugar
  • 2 cups Cascadian Farm Cinnamon Raisin Granola

Method

  • Step 1

    Preheat oven to 350°F. Line two baking sheets with parchment paper.

  • Step 2

    In a medium bowl, whisk together the flour, baking soda, and salt.

  • Step 3

    In a large bowl, cream together the butter and sugars until light and creamy.

  • Step 4

    Beat in the vanilla and egg into the creamed butter.

  • Step 5

    Slowly add the flour mixture while beating the creamed butter until fully mixed.

  • Step 6

    Stir in the granola. Scoop dough balls onto prepared baking sheets.

  • Step 7

    Bake the cookies until golden. Allow to cool for 5 minutes on the pan, then remove the cookies and place onto a wire rack to cool.
