ingredients

  • 1 tablespoon chopped peppers
  • 1 tablespoon chopped mushrooms
  • 1/4 teaspoon minced garlic
  • a pinch of parmesan cheese
  • 1 teaspoon chopped parsley
  • 1 teaspoon chopped green onion
  • salt, to taste
  • pepper, to taste
  • 2 eggs
  • 2 dollops of Crème Fraîche

Method

  • Step 1

    Preheat oven to 350F.

  • Step 2

    Fill a small baking tray with a layer of water to create a bain-marie. This adds moisture and steam when the eggs are baking.

  • Step 3

    Lightly spray two ramekins with olive oil or butter. Next, add in chopped peppers, chopped mushrooms, minced garlic, a pinch of parmesan cheese, chopped parsley, chopped green onion, and salt/pepper.

  • Step 4

    Carefully crack one egg into each ramekin. Sprinkle a bit more cheese on top of the egg followed by a quick seasoning of salt & pepper, and a dollop of Crème Fraîche.

  • Step 5

    Place the ramekins in the tray with the water and bake for 10-15 minutes. Keep an eye at the 10-minute mark to make sure the whites are set.

  • Step 6

    Serve up with buttered toast.
