Creamy Cassava Tortilla Soup
Creamy Paleo Tortilla Soup // inspired by my recent travels to the Islands of Loreto and @villadelpalmarl, this traditional soup gets the Beth treatment with homemade or (@sietefoods) crispy cassava tortillas that are both blended into this flavorful soup and served on top, along with avocado, cilantro, fresh lime, smoky salsa macha and if you’re feelin’ it – some Mexican cheese. Notes: Not paleo/can do corn? Reg corn tortillas are perfection in here, too. This soup is made with chicken stock (I like bone broth) but can be made veg-friendly with a good veg broth!
