Tofu provides the base for these light and airy vegan chocolate mousse cups, layered with sweet, tart cherry compote.

ingredients

  • 14 ounces silken tofu
  • 5 ounces vegan dark chocolate, chopped
  • 1-2 tablespoons maple syrup
  • 2 tablespoons raw cane sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 10 ounces frozen cherries

Method

  • Step 1

    In a bowl placed over a pot of hot water, so that the bottom of the bowl isn't touching the water, melt the chocolate over low heat. Let it cool slightly before stirring.

  • Step 2

    Put the silken tofu in a blender and blend on low speed. Add the chocolate in a slow, steady stream. Add the maple syrup and continue blending on low speed until it becomes light and fluffy.

  • Step 3

    In a separate pot over medium heat, add the cherries and cook, stirring occasionally. In a small bowl, whisk together the water and corn starch to make a slurry. Add the mixture to the cherries along with the cane sugar, stirring to combine. Continue cooking over medium heat until the cherries are soft and the liquid has thickened. Let cool.

  • Step 4

    Assemble the mousse cups. Put a spoonful of the cherries in each dessert glass, then the mousse, and on top with more cherries. Enjoy!⠀
