Blondies

ingredients

  • 1 cup (2 sticks) unsalted butter, melted and slightly browned
  • 2 1/3 cups (290g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 2/3 cups (330g) brown sugar
  • 2 large eggs
  • 1 1/2 teaspoon vanilla

  • 2 Honey Crisp apples, peeled and chopped
  • 1/4 teaspoon cinnamon
  • 1 tablespoon unsalted butter

Maple Cream Cheese Frosting

ingredients

  • 8 ounces (1 block) cream cheese, softened
  • 1 stick unsalted butter, softened
  • 1 cup confectioners sugar
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon

Method

  • Step 1

    Preheat the oven to 350°F. Line a 9x13 baking dish with parchment paper.

  • Step 2

    In a large pan on low heat, melt butter.

  • Step 3

    While butter is melting, in a medium sized bowl, add the flour, baking powder, salt, cinnamon, and nutmeg. Whisk together until combined and set aside.

  • Step 4

    Once your butter is melted, turn the heat up slightly (low - medium) and get the butter slightly browned. This should just be a few minutes - stir frequently to avoid burning.

  • Step 5

    While the butter is browning, saute apples in a large pan with butter for 10 minutes. Add in cinnamon and stir well. Remove from heat.

  • Step 6

    Add melted butter, brown sugar, eggs, and vanilla to a large bowl and mix well with a hand mixer or whisk. Using a rubber spatula, fold in the dry ingredients followed by the apples.

  • Step 7

    Bake for 35-45 minutes (keep an eye on this as every oven is different). The tops should be golden brown and the center should be firm (not jiggly).

  • Step 8

    While the blondies are baking, in a large bowl, add cream cheese and butter. Use a hand mixer to fully combine. Add in the powdered sugar and maple syrup, mix again. Place in the fridge to firm up slightly.

  • Step 9

    Remove blondies from the oven and let cool for 1 hour in the pan before removing.

  • Step 10

    After 1 hour, lift from the parchment paper and transfer to a cooling rack, let cool for another 1-2 hours. You want this fully cooled because the frosting will melt if placed on too warm of blondies.

  • Step 11

    Spread the frosting over the cooled blondies, and sprinkle the top with cinnamon. Let frosting set 30 minutes before slicing.
