Try this gluten free blueberry oat muffin in cake form to make your weekend brunch feel extra special.

  • 1/2 cup oats
  • 1 tablespoon chia seeds
  • 1 scoop vanilla protein powder
  • 1/2 banana, peeled
  • 2/3 cup any plant milk
  • 1 teaspoon baking powder
  • 1 dash vanilla extract
  • cinnamon, to taste
  • sea salt, to taste
  • frozen blueberries, as desired


  • Step 1

    Preheat oven to 400ΒΊF and grease a small baking dish.

  • Step 2

    Combine all ingredients in a blender and blend until all ingredients are mixed and a batter consistency is reached.

  • Step 3

    Pour batter into a greased baking dish and top with a handful of blueberries, pressing some down, and bake for 22-25 minutes until the top is crackly and golden. Top with a splash of creamer and cashew butter and enjoy.
