Dark Chocolate Chunk Cookies

Ingredients
1/2 cup butter OR vegan butter, softened to room temperature
3/4 cup coconut sugar
1 flax egg (1 Tbsp flax meal + 3 Tbsp hot water)
1 tsp vanilla
1 cup all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
Scant 1/4 tsp salt
3/4 cup chopped dark chocolate
Directions
Preheat oven to 350˚ F and line a baking sheet with parchment paper.
Make flax egg by combining the flax meal and water in a small bowl and let sit for about 5 minutes.
In large bowl cream together the butter and sugar, then add flax egg and vanilla and mix until well combined.
In medium bowl whisk flour, baking soda, baking powder, and salt.
Add dry ingredients to wet, stirring just until combined. Stir in chopped chocolate until just mixed 8
Refrigerate for 30 min, then scoop into 1 tbsp sized balls and place at least 2 inches apart of the prepared cookie sheet. Bake at for 7-9 min or until edges are barely browned.
